This unique recipe is often remembered as CURRIED RED KIDNEY BEANS. The addition of fresh ginger gives this curry a lovely spicy flavour. Ingredients used for Curried red kidney beans (Serves 4):
8 oz (225 g) red kidney beans, soaked, drained and rinsed, medium-sized onion, 2 large clove garlic, 2 tablespoons vegetable oil, 1-2. teaspoons grated fresh ginger, 2 teaspoons ground coriander, 1 teaspoon turmeric, teaspoon ground cumin, 2 teaspoon garam masala, 1 large tomatoes, peeled and chopped (you can use canned ones), sea salt. Please follow the prescribed number of spices and ingredients for a better taste and proportion.
Preparation method for Curried Red Kidney Beans:
For the preparation of this delicious recipe. Cover the red beans with plenty of water and cook until tender. Peel and chop the onion and crush the garlic fry them in the oil in a largish saucepan, together with the grated ginger, for 6-7 minutes, stirring them from time to time, then add the ground coriander, turmeric and garam masala and cook for a further minute or two, stirring, before adding the tomatoes.
Then put a lid on the saucepan and let everything cook gently for minutes.
Drain the cooked beans, reserving pint (to ml) of the liquid, and add this to the tomato and spice mixture, together with a good teaspoon of sea salt. Let it simmer for a further minutes, then add the drained beans and heat them through. Serve with some fluffy boiled brown rice and chutney. The recipe is now ready to eat and serve.
